When water enters the separator, a baffle reduces water turbulence and allows oil particulates to collect on one side while the other side of the baffle is trapped by wastewater. Then, the floatable droplets of oil are separated from the water by gravity while any solids that remain are collected by the baffle and routed to a coalescer. Typically, this can be done using a vacuum truck with a large volume hose that sucks the oil and debris from the separator into its tank for proper disposal.
